Holiday Ham Recipe

Each year, American Cruise Lines offers a selection of wonderful small ship domestic holiday cruises along the Mississippi River, on Chesapeake Bay, and along the country’s Gold Coast between Charleston, South Carolina, and Amelia Island, Florida. The Line’s year-end cruises include festive holiday celebrations on board and on shore, including traditional holiday meals, cocktail parties, gift exchanges, Christmas caroling, cookie decorating, and so much more. But for those of us that are not able to get away with family and friends this season, our head chef offers a holiday recipe for you to try at home.

Holiday Honey Mustard Baked Ham

Ingredients:

  • 2 pineapples, peeled lengthwise, cored, and cut crosswise into ¼ inch-thick slices
  • 3 cups sugar
  • 2 cups water
  • ¼ cup Dijon mustard
  • 10 pound cooked ham, trimmed
  • 2 cups bourbon
  • 2 tablespoons soy sauce
  • 2 tablespoons honey

Directions:

  1. Bring pineapples, sugar, and water to a boil in a large saucepan.
  2. Reduce heat; simmer, skimming foam. Cook until pineapples are translucent and mixture has reduced to 4 cups, 60 to 80 minutes. Transfer to a large bowl; let cool. Stir in mustard.
  3. Preheat oven to 350°F. Place ham in a roasting pan.
  4. Combine bourbon, soy sauce, and honey. Drizzle over ham.
  5. Coat ham with half the pineapple glaze.
  6. Pour 1 cup water in the bottom of the pan.
  7. Baste throughout cooking with rest of glaze.
  8. Bake ham until internal temperature has reached 165°F for 15 seconds.
  9. Transfer ham to cutting board; let rest for at least 30 minutes before carving.

Makes approximately 10 servings.
